Azolla and the Ram is chef- driven local farm to table catering, personal chef, and culinary education experience owned and operated by Chef Jeffery Beech located in North West Arkansas.

Beech was raised in NE Arkansas steeped in southern culture and large community gatherings. Newly relocated back from Austin’s booming fine dining and food scene for the last 12 years. He has worked for Cipollina in the historic Clarksville area of Austin, cooked for the seafood restaurant within Whole Foods Headquarters, and Chef for local catering company Royal Fig Catering. Beech recently returned home to his home state with his family to a growing culinary scene.

Seasonal, fresh, and local farming traditions inspire a healthy sustainable partnership from sourcing locals meats and produce. Beech likes to play with modern takes on traditional southern fare. His experience with Mediterranean, Asian, and Mexican foods bring a new twist to Bbq, charcuterie and southern family dining style food with artistic beauty in every plate.

The name?..

Azolla is a micro aquatic fern that throughout the ages has had beneficial properties as well as being a companion plant for rice paddies. We could nerd out about sustainable agriculture and practices all day.

The Ram is a symbol of courage, determination, abundance, and new beginnings. Signifying evolution and growth within ourselves and others. Just as the Ram’s horns grow bigger each passing year, so must our inner strength and upholding high standards. While the Ram represents Aries a zodiac constellation, there was a shift in Babylonian times from the Farm Hand or agrarian worker.
